Welcome to my first try at this! I'm offering LS/GF/ Vegan Frendly Spice Blends. These are resipies tha Ive developed for restaurants over the many years in this crazy industry we call home. The difference in my blends is that I use the bare minimum of salt. You will use a small amount every time you use it. Down below I have a few recipies as a reference.

Low Sodium/Gluten Free Dressings. These are the dry ingredients only. You will need the Oil/Vinegar, Mayonnaise...ect. Each Item is used for 2 Quarts of dressing, or 1 Quart of Marinade.

              Just a couple of recipes

​Marinara

1 Quart Roma Tomatoes

2 cups Mirepoix

1 cup Beef stock

Red wine

2 T Italian seasoning

Sauté Mirepoix until soft, deglaze with red wine, and add tomatoes and beef stock. Add Chefshokers Italian seasoning, and simmer for 1 hour.

 

 

Carnitas

2 # pork butt

2 cups orange juice

2 T Chefshokers Caritas Blend

2 cups chicken stock

2 bay leaves

Cut pork butt into 2-inch cubes. Toss in Ornge Juice and seasoning, and chill overnight. Add Chicken Stock and cover with foil. Bake at 250 for 2.5 hours or until tender.

 

 

Pork Belly

 

1# Quality Pork Belly

2 Tablespoons Fat Man seasoning

¼ Cup Apple Vinegar

Salt.

Score the fat cap on the top of the {ork belly

Place it in a Ziplock bag and refrigerate overnight.

Rub both sides with the Fat Man seasoning.

Sear in a hot skillet until brown.

Place in a 250-degree oven uncovered until you reach 160 degrees

Let it rest for 10-20 minutes.

 

 

 

 

 

 

 

Tacos

 

2# lean Ground beef

2 oz. Taco Seasoning

1oz Tomato Paste.

Salt to taste

Optional- Boil 1 cup small-diced Onion, Drain, and fold into the finished product.

 

Roasted Tomato and Basil

 

4 Beefsteak Tomatoes

Fresh Basil

2 oz of Chefshokers Garlic and Herb Seasoning

Parmesan Cheese

Cut the Tomatoes into 2” slices.

Cut each slice ¾ of the way.

Stuff Tomatoes with Basil.

Place on sheet tray, season, and dust with Parmesan Cheese

Bake at 425 for 15 Minutes.

Salt to taste.

Drizzle with Balsamic Glaze

 

 

 

 

 

Chile

 

Everyone has their own way of making Chile. This is just the spice blend to add instead of having all those different containers in your pantry. Just remember, there’s very little salt in my products. I’ll leave it up to you.

 

 

 

 

Herb Garlic Toast

 

Focaccia bread

Parmesan Cheese

Butter to taste.

Lightly Sprinkle with Chefshokers Herb Garlic Seasoning.

Add Cheese and bake at 425 degrees until done.

 

 

 

Hot Wings

 

1 dozen wings

1/2 cup melted butter

2 oz of Chefshokers wing spice

 

Bake or fry wings

Combine butter and spice, then toss wings....I know pretty simple.
